Steamy Sweet Potato Goodness

Steaming or boiling sweet potato is a quick and easy way to add this healthy carbohydrate to meals.  

Boil sweet potato: Add peeled and chopped sweet potato to a pot of lightly salted water. Bring to a boil then reduce heat to simmer for 15-20 mins, until tender when poked with a fork. 

Will store in the fridge in a tightly sealed container for 3 days. Great to prep and conveniently add to cooking or baking over a few days! Here are a few idea's on how to add boiled sweet potato into healthy eats: 

Casserole Topping 

Sweet Potato Turkey Pie

Puree steamed sweet potatoes with a little bit of broth or butter until smooth. Use to top any casserole or meat pie dish as a healthy alternative to replace pastry or white potatoes.

A family favorite, especially when the Sweet Potato Pie recipe is paleo and therefore can feel guilt-free indulging in this for breakfast! (Although maybe omit the whipped cream). 

There are also some great recipes for muffins and pancakes using this veg. 

Homemade Baby Food 

Silicone MoldBlend or puree boiled sweet potato until smooth, adding water as needed to reach the desired consistency. Freeze in silicone mold for an easy meal to thaw when in a pinch for time to feed little's!  Will store for up to 6 months in a tightly sealed container in the freezer. 

Smoothie Enhancer 

Using sweet potato as a base in smoothies with a banana, dates, almond milk and a dash of cinnamon. Makes for a creamy and filling breakfast option! Great to quickly put together and take with you on busy morning's.
